Der enokitake ist common in our forests from autumn to spring, often growing on stumps. Japanese invented a growing method that turns this very healthy but not very appealing mushroom into fungal noodles. Try it in a soup or broth and discover low carb spaghettis with many health benefits (37 kcal/100g)
Our enokis are grown in a low light environment, like asparagus which gives them this white color and long stem. Unlike asparagus and chicorée, they do not rely on photosynthesis which means that this lack of light doesn’t prevent them from synthesizing many life-changing nutrients as many Japanese studies show.
Culinary value
The enoki is useful in japanese recipes as well as a healthy replacement to nudeln, it will make you feel full without the risks of gaining weight with too much carbs
